Chef Wesley Dier is a graduate of the Culinary Institute of America and former chef/owner of 40 West restaurant of Rhinebeck, New York. Dier, a multi - award winning chef has trained under a pedigree of James Beard award winning chefs, including Melissa Kelly, Tom Colicchio, & Larry Forgione. With his use of organic vegetables, homegrown herbs, local cheeses, grassfed meats & artisanal poultry the chef has garnered much critical acclaim, including praise from Bon Appetit & Wine Spectator magazines and has served the likes of Sir Anthony Hopkins, celebrity chef Mario Batali, Jimmy Falon & Linda Ronstadt. Some of Chef Dier's accomplishments include guest speaker at the Culinary Institute & the only winner of the prestigious Sonnenschmidt Award for three consecutive years at the Taste of the Hudson Valley. The chef continues to dazzle diners with his awe inspiring cuisine - full of cultural diversity, international flare and respect to local product.
